Goldener Hirsch F&B Operations Assistant Manager - Winter 2020-21 (Project Management)



Purpose of Position
The Goldener Hirsch F&B Operations Assistant Manager will assist the Goldener Hirsch F&B Operations Manager with assuring the most efficient and effective operation of restaurant according to Deer Valleys service standards. These goals are to be accomplished through effective use of the facility and staff. In addition, the Assistant Manager will be responsible for upholding the reservation program, cash handling duties, product controls and daily maintenance of the beverage program. It is expected that the Assistant Manager will develop working relationships with staff and other managers based in mutual respect.

Job Qualifications
Demonstrate a skill set relating to the operation of a restaurant bar and full service dining room.Demonstrate a skill set relating to food and beverage personnel management.Demonstrate excellent communication and positive interpersonal skills.Minimum of 2 years supervisory experience in food and beverage service.Minimum of 2 years of bartending experience required.Knowledge of Point Of Sale system.S.M.A.R.T. Card certificationUtah Food Handlers certification

Managerial Duties
Assist with the training of staff members. This includes bartenders, servers, hosts and bussers. At a minimum training will include company policies, product information, service style, technique and personal appearance standards.Provide daily supervision to the staff. The assistant manager is expected to delegate duties to the staff. The assistant manager will make certain that delegated duties are completed in a timely manner.Assist in maintaining a departmental log. The log should include a record of lodge occupancy, restaurant covers, sales figures, staff attendance and performance notes. All comments made by management in the log are to be professional in nature.Report daily sales totals to accounting at the end of each business day via email, copying theF&B Opersations Manager on the email.Assists in maintaining daily and weekly liquor and wine inventories. These are to be forwarded totheF&B Opersations Manager. All breakage and spills are to be accurately recorded and forwarded to theF&B OpersationsManager.Assist in maintaining respect to published hours of operation. The Assistant Manager has the authority to amend the publish hours in two situations, one for guest need, two in the event of extreme weather. If hours of operations of amended, theF&B OpersationsManager is to be notified immediately.Responsible for understanding proper functioning of the Aloha system, as it relates to the operations. This would include proper prices; revenue tracking, tax, remote printing and guest check appearance.Assists in maintaining an effective reservations program. The program should allow for maximum guest experience while effectively utilizing all the resources of the Goldener Hirsch. An effective reservations program will provide a seamless experience for the guest from time arrival to time of departure. Reservations for the restaurant should avoid overloading any of the restaurant resources.Special Party bookings will require management attention. All special parties will require the approval of the Goldener Hirsch Chef or Sous Chef.Demonstrate a full understanding of all Deer Valley Resort Company policies and procedures.To assist management in any matters as requested.

Service Duties
Greet guests; take beverage orders from the restaurant servers or directly from guests.Prepare drinks and other bar beverages as ordered and in compliance with Utah Department of Alcoholic Beverage Control laws.Check identification of guests to verify age requirements for purchase of alcohol.Handle an assigned house bank and follow all cash handling procedures.Collect payment for drinks served and balance all receipts.Ensure that the assigned bar area is fully equipped with tools and products needed for mixing beverages and serving guests.Prepare purchase requisitions as needed to replenish supplies, present to the MOD for approval.Serve food items to guests seated at the bar and in the dining room.Demonstrate a thorough knowledge of food and beverage products, menus and promotions.Maintain a clean working area by sweeping, vacuuming, dusting, cleaning of glass doors and windows, etc.Provide guidance to guests on resort activities, dining options and general resort and regional information.Other duties as assigned.

Working Conditions
May be required to work outdoors as business demand dictates.Will work near moving or mechanical parts.May work near toxic/caustic chemicals and with fumes or airborne particles.Varying schedule to include evenings, holidays and extended hours as business demand dictates.

Physical Requirements
Frequent walking and/or standing for long periods of time.Must be able to lift up to 30 lbs.
